Brown Sugar as a positive ingredient

Consumers are actively seeking less processed products that they perceive to be more natural. In response to the growing popularity of plant-based alternatives, brown and golden cane sugars, as well as cane syrups, are associated with sweetening that is naturally sourced and better tasting*.

Artificial ingredients are a no-go

Increasingly keen to avoid artificial ingredients, consumers are often willing to pay a premium price for products free from man-made colors, flavors and additives. Brown and golden sugars from sugarcane are associated with natural sweetening.

Different origins of sugar have different flavor properties, derived from specific compounds within the cane. We have analyzed the key flavor compounds, which give brown cane sugars their characteristic fruity caramel-like taste.

After comparing sugars from around the world we discovered that our own Unrefined Demerara from Belize has a higher concentration of these compounds than all of the other sugars measured. In some cases, there was more than 20x the concentration.

This goes some way to explaining the uniquely powerful taste of our own Belizean Unrefined Sugar and the benefits it gives as an ingredient to our customers’ finished products.
